Uses in Cooking:
The beauty of the 5 peppercorn blend is such that one often prefers to use a transparent pepper mill to grind it, through which its beautiful colors can be admired. Much milder than pure black pepper, it is also very aromatic with the subtle underlying fragrance of allspice.
You will use it in all kinds of dishes, but you will especially appreciate it in moderately spiced dishes with delicate flavors, such as on a good piece of meat, fish, or in a salad. In fact, in richly spiced dishes like couscous or paella, you won’t really notice the difference between its flavor and that of a more "classic" pepper.
Some also add it, without grinding it this time, to flavored or spicy olive oils, where once again, its beauty and fragrance are particularly well highlighted.
You can also further personalize your blend by adding, for example, wild Voatsiperifery pepper, red pepper flakes (you might think it’s odd, but it’s excellent!), or Timut pepper, which will bring a bit of acidity.

In this blend, there are 3 true peppers: white, black, and green, along with 2 other berries that are often mistaken for peppers, though they are unrelated. These are pink peppercorns and allspice.
