Uses in Cooking:
Lemongrass is available in cut leaves, approximately 2 to 6 cm in length.

It imparts a delicate flavor to meat dishes (sliced beef, pork, chicken), fish, and marinades. It also pairs beautifully with ginger and coconut milk.

In iced tea, lemongrass is very refreshing and soothing in the summer. In northern Morocco, it is sometimes added to mint tea.

For cooked dishes, to ensure no firm pieces remain, you can place the leaves in a tea ball or gauze pouch to simmer in the juice during cooking. This allows easy removal if the leaves haven’t fully rehydrated by the end.

Other names: Indian lemongrass, Indian verbena, lemon grass

Lemongrass is a traditional ingredient in Southeast Asian cuisine (India, Thailand, Indonesia…), Malaysia, Indonesia, and China.

It can also be infused, and this infusion can be used as a skin lotion. It cleanses acne-prone skin, and when used in massages, it helps combat cellulite.

Though it should not be confused with citronella, commonly known for repelling mosquitoes, lemongrass also has essential oil with similar properties. In Africa, it is often planted around homes to keep mosquitoes away with its scent, and in gardens, it can help reduce the presence of chiggers.

A perennial tropical herb from the Poaceae (grass) family, lemongrass has long, ribbon-like leaves with sharp edges, measuring 90 cm to 2 m in length, and is cultivated for the lemony flavor of its leaves. It thrives in sunny, warm, and humid climates, with harvesting from July to October.

Lemongrass originates from southern India but is now found in various parts of Africa and the Caribbean. Around fifty species are native to Asia and have been naturalized in tropical regions worldwide.
