This fairly spicy blend, lightly salted and extremely aromatic thanks to the many spices it contains, is typical of Indian cuisine, particularly the famous "tandoori chicken" dish.
This dish is made simply by adding this blend to yogurt, then generously coating the chicken pieces with the resulting mixture, adding some lime juice. Let it marinate overnight in the fridge before grilling. The yogurt, combined with the spices, forms a deliciously aromatic crust on the chicken, which can be served simply with potatoes cooked in the embers. The yogurt also tempers the spiciness of the tandoori.
An even simpler way to use this blend is to simply sprinkle it on beef, lamb, poultry skewers, or offals, on a barbecue grill, or even on a tuna steak. It will give them a delightful exotic flavor....
